I love that pumpkin, butternut, spaghetti, and other fall squash is everywhere! I went to dinner at True Foods the other day and they are using butternut squash in soup, salad, and pizza. I normally get the Grass Fed Bison Burger lettuce wrapped and dairy-free but I chose to try something new. I had the Chicken Chopped Salad with added grilled butternut squash then asked them to make it dairy-free and gluten-free. It was delicious!!!
The fall is all about being grateful. It has been great to be reminded daily to be grateful from everyone posting on Facebook. I am thankful that my dad gave me my Vitamix to be a year ago for my birthday and I’ve gotten to use it everyday to try out all these veggie smoothies. They haven’t always been tasty in the process but with all these seasonal menus here in San Diego I got inspired to put together my veggie smoothies for the fall recipes so you can enjoy them too.
When I have leftover coffee from the morning that gets cold, I love to make a Pumpkin Spice Iced Coffee.
Veggie Smoothies For The Fall #1: Pumpkin Spice Iced Coffee
- 6-8oz coffee
- 1/4 c coconut milk
- 1 banana
- 0.5 oz almonds
- A couple of shakes of pumpkin pie spice
- 3 ice cubes
Throw all of these ingredients into your Vitamix then blend at Variable 10 for 60 seconds.
Veggie Smoothies For The Fall #2: Pumpkin Chai Smoothie
– From Recipes to Nourish
- 1/2 cup organic pumpkin puree (fresh or canned)
- 1 frozen organic banana
- 1 cup unsweetened almond milk
- 2 medjool dates)
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/8 teaspoon ginger
- dash each of black pepper, ground cloves and ground cardamom
- 1/2 c coconut milk
- 1 1/2 c almond milk
- 1 c spinach, tightly packed or 2 c loosely packed
- ½ cup raisins
- 2 c butternut squash
- 6 bananas
- 1 tsp vanilla
- ½ tsp vinnamon
- ¼ tsp nutmeg
Blend the ingredients in the order listed. Blend the greens and liquid first and then blend the rest of the ingredients. This creates more space in your blender. Add more water if required to thin it out. Substitute any of the ingredients for whatever you already have. If your smoothie is too warm, you can cool it down in the fridge or freeze some of your ingredients before blending.
