This is one of the most popular breakfast recipes my clients and friends ask me to make. So finally I’m writing this blog so you can enjoy this easy paleo kale breakfast bake too.
I originally found this online from a paleo recipe site but its not up anymore!! I live been making this bake for 3 years and have changed up the recipe depending on what I have in the frig to use up. This is what I used this morning for the paleo kale breakfast bake.
Ingredients:
1 Package Spicy Breakfast Sausage
2 Sweet Potatoes
1 Bunch Kale
1 Box Cherry Tomatoes
6 Eggs
Coconut Oil
Yep, that’s it!!!

Pre-heat oven to 350
First, get your hubby to use his muscles and dice up the sweet potatoes. Then sauté in coconut oil for 10-15 minutes until soft.
Second, brown the sausage.
Third, in a baking dish grease with coconut oil then layer the kale, tomatoes, sweet potatoes, and sausage. Bake for 10 minutes.
Finally, crack the 6 eggs and cook for another 5-10 minutes.
The kale should be a bit crispy and the eggs cooked to how you like them. Enjoy!!!
